Vegan Cold Brew Coffee Popsicles

It’s been a hot minute since I had a popsicle (no pun intended.) I grew up overeating freeze pops with my brothers (hello food coloring) but aside from that popsicles weren’t very prevalent in my life–and all of that ended anyway when I was 13 and stopped eating anything that wasn’t a vegetable or animal. Man–I’ve been missing out!

If you’ve known me for even small amount of time you know that I love my coffee, so it was only a matter of time before I came up with a healthy way to incorporate it in a frozen dessert to help me survive the brutal Arizona heat. I’ve had a popsicle mold sitting around since an old client project and it was about time I gave it a purpose again, and these healthy coffee popsicles were the perfect experiment. Spoiler alert: You’d never know they’re healthy! These are seriously the perfect light yet flavorful coffee treat for summer.

Healthier, Refined-Sugar Free Popsicle Recipe

My favorite part about these cold brew popsicles is how healthy they are–no refined sugar or chemicals in sight. They’re made with only 5 wholesome ingredients and are naturally sweetened with honey (or maple syrup if you’re vegan.) If you’re keto you could you Lakanto or another keto sweetener to make these low-carb. If you want to make them even healthier you can add a scoop of collagen protein!

How to make Cold Brew Popsicles

These Vegan Cold Brew Coffee Popsicles come together quickly and easily and all you need is a blender and a popsicle mold (ok, and a spoon). The creamy coconut milk and cold brew come together perfectly for a refreshing, java treat that tastes fun and decadent even though it’s healthy. No one will ever guess that they’re so nourishing and easy to make!

The only prep work you need to do is to soak your cashews. I like to soak mine overnight, but if you’re short on time you can put them in hot water for a couple of hours and that will do the trick.

Once your cashew are soft you just blend them in a blender or food processor with the rest of your ingredients and a bit of coffee. Then you pour some coffee into each of the mold and top it with the cashew and coconut milk mixture, which will create a lovely swirl. The you freeze them for at least 3 hours, or until frozen solid, and you’re ready to enjoy! I’ve been loving having these while it’s been 110+ here in Phoenix and I hope you enjoy these as much as I am!

Vegan Cold Brew Coffee Popsicles

INGREDIENTS

  • 3/4 cup cashews, soaked in hot water for at least 3 hours or overnight
  • 1.5 cups canned coconut milk full fat
  • 2 tbsp coconut oil
  • 1/4 cup honey or maple syrup
  • 1/2 cup + 2 tbsp cold brew coffee divided

INSTRUCTIONS

  1. Combine all ingredients except for cold brew in a blender, starting on low speed and increasing to high gradually. Blend until well combined, then blend in 2 tbs of coffee.
  2. Gently pour about 1-2 tbsp of the remaining coffee in each mold, then pour in the the coconut cream mixture which will lightly swirl with the coffee.
  3. Add popsicle sticks and freeze until firm, at least 3 hours. Makes about 8 popsicles.
