Paleo Chocolate Zucchini Collagen Muffins

Delicious, collagen packed muffins with fresh grated zucchini and comforting cocoa flavors. A perfect paleo breakfast or snack on the go!

Happy hump dayyyy. You made it! Hump day is usually slump day for me. I usually hit a rut in my energy after too many days of not enough sleep. I know that I need to be better about getting enough sleep — I do try. It’s challenging to fit blogging in with my full time job, taking care of Hudson, working out, and doing all of the standard adult things. Thats a lot! I have mad respect for people who are parents, on top of all this stuff. You guys are the real MVPs.

Mondays are more of my “day.” I actually like Mondays, and look forward to them. I think that’s a great thing to have as a goal — being someone who looks forward to Mondays. I know we can’t all have jobs that we #love for practical reasons, but we all have control over our mindset and approach to our day. I know what it’s like to hate where you’re living and working, and I know that it’s still possible to be a Monday person, despite that.

Having side hustles and creative passions certainly helps Monday look brighter. I think that’s an important thing to have no matter what you do for a living. Sometimes your side hustle becomes your job, and that’s where the magic really happens. But, even if that’s never the case, it’s still worth pursuing something thats your own. I absolutely love the How I Built This podcast — mostly because it shows how inspired people are when they have little ideas and side projects that make them excited to wake up each day.

I’ve always had multiple things running on the side that give me a creative outlet and let me practice the things I enjoy. My blog is a big part of my life right now, and one that I really pour my heart and soul into. Besides blogging, I also love designing logos and websites for fun, learning coding tricks, researching health topics, drawing, decorating my apartment, traveling, lifting weights, and hiking. I don’t think I know what it’s like to be bored. I kind of love that.

I’m not sure where any of this is going, other than to remind you of all of the wonderful things there are to discover, make, or become. If you’re in a mid-week rut, just find a way to make something you’re passionate about become a part of your daily routine. It’ll help — I promise.

Ok, lets talk about muffins.

These have been accusing of being weed muffins and THEY ABSOLUTELY ARE NOT. I was homeschooled in high school, guys. I don’t make weed muffins (but I don’t dress like I’m on Little House on the Prairie, just for the record.)

Paleo muffins used to completely elude me, but I think I’m getting the hang of it. Coconut flour is my weapon of choice right now. I know it has been accusing of being too drying, but I’ve found that it works well with a little collagen peptides, some coconut oil, and the right number of eggs. In any case, it certainly worked for these. I’ve brought these Paleo muffins to my non-Paleo co-workers a few times now, and they’ve been a hit! I’m such a proud muffin mama — They are finally ready for the world.

Paleo Chocolate Zucchini Collagen Muffins

PREP TIME 10 minutes
COOK TIME 30 minutes
TOTAL TIME 40 minutes
SERVINGS 8

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 350 F. 

    Use a cheesecloth to thoroughly squeeze the moisture from the grated zucchini (don't forget this!)

  2. In a separate bowl, whisk together coconut flour, baking powder, cacao powder, and collagen. 

  3. In a large bowl, mix together eggs, maple syrup, vinegar, coconut oil, and almond milk

  4. Mix dry ingredients into wet. The batter will be somewhat thick. Fold the zucchini into the batter, stirring only enough to combine. 

  5. Spoon into 8 muffin tins (use parchment muffin liners -- nothing sticks!) Bake at 350 for 25-30 minutes, until a knife comes out clean. 

  6. Cool completely on a wire rack before storing.
