Dairy Free Mocha Dalgona
I was a late adopter of the Dalgona craze for sure. ( which is pretty much how I am with everything.) but my curiosity finally got the better of me, and I had a new set of glasses that I really wanted to shoot with, so I spent a Friday afternoon experimenting. And guys… it was so fun.
I have to say I’m not going to be replacing my standard drip with Dalgona (I’ve always been a basic pour over coffee girl) but it was fun to experiment with and shoot! And it gives me a fun drink to make for guests one day when quarantine is over! I’m already thinking of some Dalgona spin offs with other flavors and presentations. And how fun would it be to make a Dalgona Ice Cream Cake? So fun.
I have to warn you that I had a few failed Dalgona attempts before this, all because I didn’t use instant coffee. So learn from my mistakes and make sure you use instant coffee when you make yours. Or you’ll be beating for forever and getting nowhere.
This Dairy Free Mocha Dalgona is definitely worth the hype. Because if you’re going to have a sugary coffee drink it should have chocolate involved. Otherwise you’re just wasting calories. Fact.
What is a Dalgona Coffee?
It’s a whipped coffee drink–sort of like a reverse latte. The milk in on the bottom with the whipped sugar/coffee mixture on top. The nice thing is that you can make this dairy free or even keto by using plant based milk and using monkfruit in place of the sugar.
Tips for making Dairy Free Mocha Dalgona:

Use a handheld beater or whisk to make this or you’ll have very sore arms tomorrow!

Add both cocoa powder and melted chocolate for a little extra kick

granulated sugar

hot water

almond or coconut milk

chocolate chips
melted (Use Enjoy Life or Hu for dairy free)

In a mixing bowl, combine instant coffee, cocoa powder, sugar and hot water. Use a frother or a beater to mix on high for several minutes. The liquid will slowly thicken and turn to a light golden brown. Stop beating when the texture resembles stiff peaks.

Carefully fold in the melted chocolate chips

Add ice to glass (optional). Pour your milk over the ice and then top with the whipped coffee mixture. Enjoy!
