INGREDIENTS
1/4cuphoney
2tbspcoconut sugar
3Tbspcoconut oilmelted
1tspvanilla
½tsp.cinnamon
1/4tspfancy sea salt
2cupsslivered almonds
1/2cupwalnut pieces
1/2cuppumpkin seeds
1/2cupunsweetened coconut flakes
2tbspchia seeds
Extra saltfor topping
INSTRUCTIONS
Preheat oven to 275 F°. Line a baking sheet with parchment paper.
Stir together honey, sugar, oil, vanilla, cinnamon, and salt until smooth. Mix nuts, coconut flakes, and seeds in a bowl, then pour the honey mixture over the nut mixture and stir to combine. Pour the granola onto the prepared sheet and spread evenly, forming some clumps to get granola clusters.
Bake for 15 minutes, then remove and stir the granola and return to the oven to continue baking for another 10-15 minutes, or until golden. Top with additional sea salt.
Allow to cool for 20-30 minutes before serving or storing in an airtight container.
