To Make date sauce:Combine all the ingredients in a food processor. Blend on high until smooth, adding extra coconut milk if needed for a smoother consistency. Store in a covered container in the fridge until use.

Preheat oven to 350 degrees Fahrenheit. Line an 8x4 bread pan with parchment and grease with coconut oil

In a large bowl beat egg, honey, and sugar until well creamed. Add coconut oil and continue to beat well for a minute to combine. Stir in coconut milk, then vanilla, baking soda, and salt.

Add cassava flour and coconut flour and stir well to combine. Batter will be thick but should be spreadable. If it's too thick add 2 tbsp coconut milk.

Fold in the apple, then spoon the batter into evenly the prepared dish. Take a few big spoonfuls of caramel sauce and place on top of the batter, using a thin knife to make a few swirls in the batter. Top with apple slices if desired.

Bake for 25-30 minutes, or until lightly browned and a knife comes out clean. Allow to cool for at least 15-20 minutes before removing from the pan. Drizzle with extra caramel, sea salt, and chopped pecans and enjoy!
