INGREDIENTS

  • 1/3 cup almond butter
  • 1 1/4 cups sweet potato puree
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp coconut oil
  • 1 egg
  • 1/3 cup coconut sugar
  • 1/4 cup molasses
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp baking soda

For frosting:

  • 1 cup cashews soaked for at least 4 hours
  • 1/4 cup coconut cream from a can of full fat coconut milk
  • 1/4 cup honey
  • 2 tbsp coconut oil

INSTRUCTIONS

  1. Preheat oven to 350 F and line an 8x8 baking dish with parchment paper.
  2. In a large bowl, mix together almond butter, sugar, sweet potato, and egg until well combined.
  3. Add in coconut oil and molasses and stir to combine.
  4. Next stir in almond and coconut flour and mix well.

  2. Add the rest of the ingredients and blend on high for 3-4 minutes until smooth
  3. Spread over blondies, or keep in the fridge for up to 5 days until ready to use.
