Grain-Free Garlic Herb Focaccia

  • 2/3 cup + 1 tbsp cassava flour
  • 1/3 cup arrowroot starch
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 1 egg
  • 1/4 cup water
  • 1/3 cup extra virgin olive oil
  • 1 clove garlic thinly sliced
  • 2 tbsp rosemary
  • 2 tbsp fresh thyme
  • Extra herbs for topping
  • Course salt for topping


  1. Preheat oven to 375 F and line a baking sheet with parchment paper.
  2. Whisk together  cassava flour, arrowroot starch, salt, baking soda,  rosemary, and thyme.
  3. In separate bowl, mix together egg, oil, and water.
  4. Pour the liquid mixture into cassava flour mixture and fold to combine.
  5. Pour batter onto the baking sheet and smooth into an oval. Top with extra herbs and sea salt, and press the sliced garlic in throughout.
  6. Bake for 20-25 minutes, or until golden on top
