Healthy Chocolate Marble Loaf (paleo)

INGREDIENTS

  • 2 large eggs
  • 1/2 + 2 tbsp cups organic cane sugar
  • 3/4 cups avocado oil
  • 1/2 cup coconut milk
  • 1 tsp apple cider vinegar
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups cassava flour
  • 2 tbsp tapioca starch
  • 2 tbsp coconut flour

For the chocolate swirl:

  • - 1/4 cup cocoa powder
  • - 2 tbsp coconut milk
  • - 2 tbsp apple sauce

INSTRUCTIONS

  1. Preheat oven to 350 degrees F and line a 9x5 loaf pan with parchment paper.
  2. In a large bowl, beat together eggs and sugar with a mixture until the sugar is well dissolved. Add avocado oil and beat well for another minute, then stir in coconut milk, apple cider vinegar, vanilla, baking soda, and salt. Add cassava flour, coconut flour, and tapioca starch into the wet ingredients and stir well to combine.
  3. 3.Separate out half of the batter and mix with the ingredients for the chocolate swirl until smooth.
  4. Pour about 1/3 of the regular batter into the prepared pan and then add in about half of the filling mixture over top. Repeat again with a layer of batter and then a thin layer of filling, then top with the remaining batter.
  5. Use a thin knife to make a few swirls in the batter.
  6. Place in the preheated oven to bake for 35 minutes, or until a toothpick comes out clean.
  7. Let cool for 10 minutes and then remove from pan and cool on a wire rack.
