Toasted Coconut Collagen Smoothie (Dairy Free)

You know those days where you don’t want to cook? (For me this is every day. I know this doesn’t make sense if you don’t know me well given that all I seem to do on Instagram is cook.) Collagen smoothies are my favorite way to get out of cooking while still getting a nutritious meal in.

 

Collagen smoothies account for about half of my food right now. Part of it is because I’m working like crazy, and part is because it’s getting hot here in the desert and that makes me lose my desire to cook or eat whatsoever. I also am cooking for one so it’s easy to decide that we don’t need a solid meal. No one complains when I serve a nice blended smoothie. It’s beautiful.

 

Why collagen?

 

I try to get collagen in 2-3 times a day, and also have a cup of bone broth and a serving of bone broth protein. After doing this consistently for a full year I can’t say enough good things! While I’ve been taking collagen for over 3 years this is the first year I’ve made it a point to have multiple servings every day and I have never had such thick, healthy hair! My hair stylist was shocked the last time I went to see her. Even those of us with autoimmune diseases and thin, brittle hair have hope!

 

As I’ve talked about before, there are other benefits besides just healthy hair when it comes to collagen. It’s also been an important part of my gut healing journey and has helped reduce joint pain and inflammation big time for me. I’ll be singing it’s praises until the cows come home.

Tips for making Toasted Coconut Collagen Smoothie:

  •  Don’t skip the toasted coconut part! It’s a big flavor boost and my favorite part of this drink
  • You can use other dairy free milks for this if you want less coconut flavor
  • I use Great Lakes collagen protein in all of my shakes

Coconut Collagen Shake

This dairy free Toasted Coconut Collagen Smoothie is the perfect Paleo, low-carb breakfast with a collagen protein boost!

SERVINGS 1

INGREDIENTS

  • 1/4 cup coconut cream
  • 1 cup coconut milk
  • 1/2 cup frozen cauliflower
  • 2 tbsp collagen peptides
  • 2 dates soaked for 5-10 minutes in hot water.
  • 3 tbsp coconut flakes divided

INSTRUCTIONS

  1. Place half of the coconut flakes in a non-stick skillet over medium heat and toast for 3-4 minutes. Remove from heat and allow to cool.
  2. Add all ingredients except for toasted coconut into a high speed blender and blend until smooth. Add ice to achieve a thicker consistency.
  3. Garnish with toasted coconut flakes and enjoy!
