Radiccio Wedge Salad with Spicy Honey Mustard

A sweet and spicy radicchio salad with artichoke hearts, raisins, and an easy honey mustard dressing!

I spent the last weekend in Palm Springs and man, am I tired. I went to do a special shoot in Joshua Tree, so it ended up feeling more like a work trip than a vacation.  I brought Hudson and my friend Rachel, which certainly made the driving more bearable and the trip more fun! We left Phoenix on Saturday morning and then came back Sunday late morning. It was over 10 hours of driving for me, and I am totally done with my car for a few weeks now. Or until tomorrow when I have to drive to work.
I’m going to have a post for you guys about Palm Springs and Joshua Tree, but let me just say that it’s basically the California equivalent of Scottsdale, but with less food and restaurants. If you’re going to go, it’s hot as heck in the summer, and you can expect to be sweating buckets unless you’re just sitting in a pool in the shade. As someone who likes to be really active when they travel, I definitely wish the weather had been a little friendlier for outdoor activities. I would’ve loved to stay in Joshua Tree much longer, but the weather was too hot and the trip had too fast of a turnaround for that.

Moving on to the matter at hand: salad. I’m all about the salad life. If I’m not eating my food on lettuce I feel like a part of me is missing or confused. It feels like it’s just an appetizer. Maybe this is just the sad little Paleo/Celiac girl in me, but I get really excited about salads at restaurants. They are pretty much the only thing I ever order. So now I’ve been trying to get creative with my salads, both for you guys and for the sake of making my life more interesting. This radicchio salad was the result. Enjoy!

Radicchio Wedge with Spicy Honey Mustard and Raisins 

PREP TIME 10 minutes
TOTAL TIME 10 minutes
SERVINGS 2

INGREDIENTS

  • 1/2 head of radicchio cut into two wedges
  • 1/4 cup artichoke heart quarters
  • Pinch of cilantro
  • 1/4 cup raisins
  • 1/4 cup spicy mustard
  • 2 tbsp honey
  • 2 tbsp olive oil

INSTRUCTIONS

  1. To make salad, place radicchio on a place with artichoke hearts, cilantro, and raisins.
  2. In a small bowl, combine spicy mustard, honey, and olive oil. Pour over the salad and enjoy!
