Paleo Smoky Paprika Beet Hummus

This Paleo Smoky Paprika Beet Hummus is a creamy blend of tahini, cauliflower, and beets – no legumes in sight. The perfect addition to any Mediterranean meal!

I’m laying on the floor in Pigeon pose while I write this because my It’s not even just one muscle in particular — my legs are just useless wads of tissue right now. Sitting at the office for 8 hours after a hard leg day is clearly not doing me any favors. I bought a high top dining table so I could stand when I work from home (and so I could have freakin awesome vintage leather barstools — duh) which does help, but I’m still dying right now.

I’m trying to be more mindful of the areas of health and fitness that aren’t just “going to the gym.” That’s always been the easy part for me — that’s my me time. I feel like I’m a better, more focused person when I start my day lifting something heavy. It’s really empowering to see just how much your body is capable of — it can push aside a lot of negative feelings about appearance and health. I started weight lifting way back when I was 14 and I’ve almost never taken a day off (besides a weekly scheduled rest day) since that.

Now, thats not really something I’m proud of.

Our bodies give us signs that they’ve had enough and need to rest. Ignoring those signs only prolongs recovery, increases the risk of injury, and alters normal body functions. Balance is something we have to work at every day as our circumstances change. Sometimes it’s not healthy to deal with what life is handing you, and also go to the gym. It’s just a season of life, and you have to respect the amount of stress your body can realistically juggle before giving out.

Adrenal fatigue is something I’ve certainly been dealing with for years, and completely ignoring. I had no business working out every day through college when I was sick, losing weight, and completely stressed out. My body never got a break, and it was my own fault. Now, I’m trying to take more rest days, take time to focusing on stretching and mobility, and lower the stresses I’m exposed to. I certainly struggle with feeling anxious, and I have to take that into account when choosing whether or not I should be picking up a barbell.

Sometimes, not working out is the healthiest way to go. Its really hard to wrap your mind around that with all of the fitness sayings and “balls to the wall” mentality you see on social media.

All of that to say, I’m stretching on the floor right now, even though stretching is not my idea of a good time. And, I’m going to take it slower tomorrow since my body is pretty tired right now. This is really, really hard for me. But if what I want to promote is a balanced approach to healthy living, I need to do this.

Maybe I’ll make some of this awesome Paleo Beet Hummus while I’m at it.

Paleo Smoky Paprika Beet Hummus

PREP TIME 10 minutes
COOK TIME 5 minutes
TOTAL TIME 15 minutes


  • 3 cups cauliflower florets
  • 1 large cooked beet
  • 3 tbsp tahini
  • 1 tbsp olive oil
  • 1 clove fresh garlic minced
  • salt and pepper
  • 1 tsp smoked paprika


  1. Steam or cook the cauliflower florets until softened -- I steam mine for about 10 minutes.
  2. Add cauliflower, beet, garlic, paprika, tahini, and olive oil into a food processor or high speed blender and blend until smooth. Add salt and pepper to taste.

  3. Garnish with tahini drizzle and extra smoked paprilka. Hummus will keep in the fridge for a week.
