Nut-Free Collagen Blueberry Muffins

These Collagen Blueberry Muffins are grain free, Paleo, and perfect for a protein-packed breakfast! They’re just like hearty bakery  muffins, but with less sugar and no gluten.

Happy new yearrrr. Did you party hard until midnight? I continued my favorite New Years tradition of sleeping through everything and pretending it’s not happening. It’s my own way of being festive. I’m a huge Christmas person because it’s a time for giving gifts to my family, but I don’t get to do that on New Years, so I don’t see the point. I just like sleep and waking up well-rested way too much.

I’m not into the idea of resolutions, so that’s another thing New Years and I disagree on. I’m going to spend most of the month posting Whole 30 recipes for you guys since most of my recipes are Whole 30 compliant anyway, but I’m not sticking to that hard-core as a rule. I hate how diet culture makes people thing that they constantly need to be punishing or fixing themselves in some way, or that food has morality to it. You’re not a bad person because you ate some fun holiday food, and you don’t need to wait until the New Year to squeeze in a meal that is more nutritious. You can have both, and you can have both all year round, just aim for more consistency on the healthy side of things.  Balance doesn’t require a Whole 30 or period of dieting.  But I also know it can be helpful for some people to take a month a reset (thus the January Whole 30 crowd), so I want to be supportive. I support through food, obviously.

Before we get to the Whole 30 recipes, I had to bring you these Collagen Blueberry Muffins because…. guys. You haven’t had grain free muffins like these yet. The crazy thing is that they’re actually really good for you. These have all of the delish muffin flavors that you’re looking for via sweet blueberries, vanilla, and applesauce, with only a touch of coconut sugar. Plus, these have that tight crumb that you don’t usually get in coconut or almond flour. The secret is the cassava flour, which is the closest thing to glutenous flour that I’ve been able to find.

Oh, and these muffins have all of the health benefits of collagen happening, too. I hope you eat 4 after you make them, because that’s when you know you’ve fallen in love.

Nut-Free Collagen Blueberry Muffins

PREP TIME 5 minutes
COOK TIME 25 minutes
TOTAL TIME 30 minutes
SERVINGS 9 muffins

INGREDIENTS

  • 2 tbsp coconut oil melted
  • 2 eggs
  • 1/3 cup coconut sugar
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 2 tbsp almond milk
  • 1 cup cassava
  • 1/4 cup tapioca starch
  • 1/4 cup collagen
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup blueberries

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Line a muffin tin with 9 liners.
  2. In a large bowl, whisk coconut oil, eggs, coconut sugar, applesauce, vanilla, and almond milk until completely combined.
  3. In a separate bowl, sift together cassava flour, tapioca starch, collagen, baking powder, salt and cinnamon. Once sifted, make a well in the middle and then stir in the wet ingredients. Use a spatula to mix until completely and smooth then fold in blueberries.
  4. Scoop the batter into the muffin liners, then bake for 20-25 minutes, until a toothpick comes out cleans.
  5. Cool on a wire rack and enjoy! I find it best to reheat any leftovers before serving when I’m baking with cassava.

RECIPE NOTES

Note that I added in Pecans for an extra crunch, but that's entirely optional. If you're ok with nuts, stir in 1/3 cup of pecan pieces!
