Grain-Free Apple Pie Pancakes

I’m extra excited about today because we’re making pancakessss! I grew up in a house where pancakes were a special, rare treat on holidays and occasional weekends and they hold a very special place in my heart. My uncle has a rule that you have to flip your pancakes across the room and catch them on your plate before you can eat them, and pancakes remind me of roaring laughter watching a pancake fly from a skillet across the living room with my uncle diving to catch it on his plate. Since I live alone I can’t quite do this with my own pancakes, so I just smile and add some extra flair when I’m turning my pancakes over in the skillet instead.

But back to today’s pancakes, because these aren’t just any old pancakes.

Today we’re making Grain-Free Apple Pie Pancakes and this might be too soon but I think I might be in love with these. I love cinnamon and apple fall flavors, and they tie together so perfectly with these fluffy pancakes for a nostalgic fall brunch recipe that will quickly become a family favorite.

The Apple Pie Pancakes

These pancakes are made with Purely Elizabeth’s Paleo Certified Grain-free Pancake Mix and guys… I have no words for how much I love this pancake mix. I’ve been eating gluten-free for over 10 years now and had pretty much given up on mixes because they always came out too gummy or had ingredients on the label that I couldn’t pronounce. Even though its a pain I had resorted to making my pancakes from scratch whenever the cravings hit.

I’ve told you guys before how much I love Purely Elizabeth’s Grain-Free Granola, so when their pancake mix came out I knew I needed to give mixes a second chance, and it didn’t disappoint! The pancakes come out perfectly fluffy with a crispy edge and they’re made of the exact ingredients I would use to make my own pancakes such as tigernut flour and coconut flour–but somehow theirs taste so much better!

Making the pancakes themselves is one of my favorite parts because it’s SO easy. You just whisk together your eggs, water, and oil (I use avocado oil) and then fold in the pancake mix. Then you fry them up on each side for about 3 minutes in a greased skillet.

Because these are Apple Pie Pancakes I also made a healthy apple filling with apples, cinnamon, nutmeg, and ginger. Add a little bit to the pancakes before flipping, just like when you make chocolate chip pancakes. It’s all of the flavors you love about apple pie in a fluffy, grain-free pancake!

The Homemade Paleo Apple Compote

The thing that really makes these Apple Pie Pancakes is the homemade apple compote. That might sound fancy but it’s actually incredibly easy and tasty!  You just take the leftover chopped apple mixture and add it to a skillet with some water and maple syrup, then simmer it until it’s syrupy and thick. Then it’s the perfect topping for your pancakes! I love saving the leftover compote in the fridge to have throughout the week (although leftovers are rare with meals like this one.)

Grain-Free Apple Pie Pancakes

INGREDIENTS

  • Coconut oil for cooking
  • 1 Bag Purely Elizabeth Grain-free Pancake Mix
  • 4 eggs
  • 1/2 cup + 1 tbsp oil I used avocado oil
  • 1/2 cup + 1 tbsp water

For apple filling and compote:

  • 2 large or 3 medium apples chopped
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp ginger
  • 3 tbsp water
  • 2 tbsp maple syrup
  • Maple syrup and whipped coconut cream for serving

INSTRUCTIONS

  1. In a large bowl whisk together egg, oil, and water.
  2. Fold in pancake mix until combined.
  3. Stir together chopped apples, cinnamon, nutmeg, and ginger for the apple filling.
  4. Grease a medium skillet with coconut oil and heat to medium-high heat. Cook pancakes over medium-high heat on a preheated skillet for about 3 minutes. Add a small spoonful of the chopped apples to the pancake before flipping and cooking for about 3 minutes on the other side.

To make apple compote:

  1. Add the remaining apple mixture to a large skillet with 3 tbsp water and 2 tbsp maple syrup.
  2. Let the mixture simmer for 15 minutes or until apples are soft.
